POSITION SUMMARY:

Under the direction of the Senior Camp Director, the Food Service Director will facilitate all aspects of food service for resident summer camp, conferences and retreats including menu planning, food ordering and preparation, staffing kitchen help; budgeting for food and kitchen supplies, assisting with special dietary needs of participants.

Qualifications

  • Bachelor’s Degree and or equivalent experience in related field.
  • Knowledge of camping industry standards.
  • Knowledge of health department regulations.
  • Practical knowledge of Microsoft Office programs.
  • Experience in budget management.
  • Customer service experience.
  • Strong background in staff supervision and leadership.
  • Knowledge and experience dealing with international personnel and relationships is preferred.
  • ServSafe certification is preferred, or should be acquired in first 90 days of employment.
  • On-site housing will be provided.

Essential Functions

Division of Duties:

  • 75% Menu and Food Preparation
  • 15% Staff and payroll management
  • 10% Inventory and Budget Management

Priorities:

  • Plans, develops and implements menu for summer camp, conferencing and special events
  • Ensures all dining hall operations function smoothly and are fully stocked in relation to food, dishes and silverware.
  • Maintain all aspects of the dining hall for both front and back of house at or above health department standards.

The Food Service Director must understand and be willing to learn the necessary skills required for the successful completion of duties including:

  1. Responsible for safe operation and preparation of all aspects of food service.
  2. Prepares creative, appealing, varied and nutritionally balanced meals for all participants.
  3. Operates the food service department in a manner that meets all health department standards.
  4. Serves as a great steward of all kitchen equipment and facilities ensuring that all equipment is well maintained and safe for use, and the facilities are clean, sanitary and attractive.
  5. Upholds all American Camp Association (ACA) standards for the camping industry under Food Service Operations.
  6. Executes the preparation of advertised meals, food options, and meal times in an organized fashion.
  7. Orders food, ingredients, condiments and equipment in a manner that is consistent with budget and group needs.
  8. Maintains an efficient operation through proper hiring, training, and scheduling of staff.
  9. Conducts weekly staff meetings with kitchen staff to ensure good communication and flexibility as needed to improve food quality, systems or customer service in a timely fashion.
  10. Serves as direct contact for summer camp parents and conference attendees with special dietary needs and prepares food to accommodate all reasonable requests.
  11. Prepares the annual budget for all things pertaining to food service operation. Administers and exercises necessary controls to assure the operation is carried out in a balanced fiscal position.
  12. Acquires training as needed, either in-house or otherwise, to aid in the execution of conference programming.
  13. Strives to improve upon all aspects of the food service operation by researching trends, and works to implement improvements for the following season.
  14. Develops effective open communication with supervisor and other team members.
  15. Maintains professional and technical knowledge and certifications by attending conventions and conferences related to the camping and food service industry.
  16. Acts as a fully participating member of the camp management team of office personnel, property director, program director, development director, senior camp director and executive director.
  17. Works significant early morning, night, and weekend hours as required by the nature of the job.
  18. Provides strong leadership and support for attaining association’s goals and objectives.
  19. Communicates and demonstrates the mission of the YMCA and its objectives to the community.
  20. Assists and fosters strong annual campaign participation.
  21. Provides a safe, enriching dining experience for all camp programming.
  22. Attends to all other tasks assigned by supervisor.
