All activities are geared to the developmental level of the campers. Camp Duncan is a co-ed, summer resident camp located near Fox Lake, Illinois, on 278 acres.

Job Description and Required Certifications: Job Summary: Under the direct supervision of the Camp Director, the Food Service Manager is responsible for the management of the total Food Service operation. Primary responsibilities Work with Program Directors to establish menu plans for group's needs, ensure that all meals are ordered, prepared, served hot and on schedule. Record accurate cost per meal, maintain a current and accurate inventory of food items on a daily basis, maintain an efficient system for ordering supplies, maintain organized and clean cooler, freezer, storage areas. Maintain kitchen in excellent, clean condition at all times, maintain food service sanitation standards with all local, state and ACA guidelines, hire, train, and schedule all kitchen personnel, provide primary leadership to special events, provide leadership to all board meetings, special events or banquets, other duties as assigned. Additional Job Detail Prepare, implement, manage and meet annual kitchen budget Coordinate, prepare and submit the kitchen budget according to the budget timeline. Manage and meet all budget goals for kitchen department. Assure compliance to expense budget. Obtain approval for all purchases for the kitchen; maximize fiscal efficiencies to maintain budget goals and to assure department budget goal. Food Preparation Work with Program Directors to develop camp menus. Serve as the primary cook for all camp meals for resident camp, medical camps, group rentals, board meetings and special events. Prepare special menus for vegetarians, and for campers with food allergies. Provide food numbers and costs to business office for cost study analysis. Ensure all meals are prepared fresh, safely, on time and quality. Ensure for safe food storage and minimize the amount of waste. Hire, train, supervise and evaluate all kitchen staff Adhere to state, YMCA, ACA, FLSA and County Health Department standards in hiring practices. Hire and supervise 5-7 summer seasonal international kitchen staff and 3-4 year round part time seasonal staff. Develop and conduct training for kitchen staff and verify staff trainings with training syllabus and attendance sign in forms. Implement mid-summer and end of summer staff evaluations. Train and hold staff accountable for food sanitation guidelines. Cleanliness, Inventory & Purchasing Coordinate and prepare food orders weekly. Work between vendors to keep cost down and within budget. Maintain accurate and updated inventory of all food items and maintain an efficient system for ordering food and supplies. Maintain proper food storage and work with food vendors to ensure safe and accuracy of deliveries. Keep cooler, freezer, storage, pantries in excellent, clean condition at all times, logging temperatures on a daily basis. Provide proper training and supervision of staff using the kitchen equipment. Ensure staff maintains proper food handling procedures. Customer service Maintain positive relationships with all customers from the point of contact. Provide open and positive communication with all customers including staff. Return all customer emails and phone calls within same day. Safety and risk management Articulate correction of safety violations, emergency procedures, risk management issues and general camp policies to all camp staff. Ensure the safety of staff and campers by enforcing kitchen and camp policies. Adhere to all state, health department and ACA guidelines for safe food handling and kitchen procedures. Participate in association and center events Participate in the annual campaign, tag days, department head meetings, various trainings, and fund raisers. Hold and maintain current Food Service and Sanitation certificate or obtain one within the first 3months of employment. Requirements: Bachelor's degree in hospitality or equivalent education experience; must have 1-3 years experience working in Food Services; supervisory experience is preferred; have excellent written, oral, and computer skills. Current Food Service and Sanitation certificate or obtain one within the first 3-6 months of employment. Maintain FSS certificate while employed at YMCA Camp Duncan.
